Bill,
Vitamin D Video will always just use stream 1 using the default name (live.sdp). If you want to do something more advanced (or change the default stream name), you'll need to go into manual mode. You can use "Other IP camera", "rtsp" protocol, and a stream path like "live.sdp?tcp", "live2.sdp?tcp", "live3.sdp?tcp", etc. The "?tcp" is a trick to say to try to use TCP instead of UDP, since TCP is better for video analysis.
Having a camera listed in Vitamin D Video doesn't give you anything special over specifying the stream path manually if you know the right path to put in--it merely makes it much easier to configure any of the cameras that we've already figured out the proper path for (and on some cameras, lots of different settings can be specified so that users don't need to go and tweak as much on the web page). From looking at the Vivotek manual, there's really not much to specify in the stream path--it's up to you to configure the camera how you want it (quality, size, FPS, etc).
