I bought a Mac mini 2012 for $100 on craigslist. It runs SH 5.1.5 with 2 cameras very well, although I suspect there's a memory leak which caused the 4GB machine to crash a couple of times. Now I have upgraded memory to 8GB and it has been stable since. You can run it headless by screen sharing. So it is just a little brick which can be hung in some corner or closet. I am very happy with this setup. Judging by what's shown on Activity Monitor, it could easily handle 4-5 cameras or more.
These machines appear on craigslist all the time. They generally go for $200-400, but with a little patience, some inexpensive ones do come up. The 2012 vintage is, in my opinion, the best, as it is quite beefy and easily upgradable. The latest model is actually the 2014. (Yes, Apple hasn't refreshed it for 3 years) However, the memory is soldered and therefore not upgradable. If you get the 2014 model, better make sure it has more than 8GB.
