I am wanting to purchase 3 or 4 outdoor POE IP cameras and integrate them with Sighthound for monitoring my residence. Does anyone have recommendations for an affordable (<$200) camera that will be simple for a novice to set up? The "works with" list provided by Sighthound is a bit overwhelming, to say the least.

You might want to look into some of the HikVision cameras. Specifically, you might consider:
DS-2CD2332 (3MP) EXIR turret camera (or similar)
DS-2CD2032 (3MP Bullet camera (or similar)
I've used both of these and would buy them again.
I've also used the DS-2CD3132 Dome camera. I'm less happy with this camera - it has all the typical drawbacks of a dome camera such as IR splash and limited positioning options when compared to the turret or bullet cameras.
Depending on the camera and where you buy it, each of these cameras are less than $130 with the turrets costing a bit more (depending on the lens). The bullet and dome cameras can usually be found at less that $100.
